The biggest problem with our food system is not ultra-processed food. Rather it is that unhealthy processed food is significantly cheaper than healthy unprocessed food. The government should heavily tax processed food to make it prohibitively expensive while underwriting the cost of healthy unprocessed food making it a viable inexpensive alternative. People will not change their dietary habits until they can afford to. That is how many communities have cut down on unhealthy habits like smoking and drinking large amounts of sugary drinks. They imposed taxes so high on those products that consumers could no longer afford them and stopped buying and using cigarettes and sugary drinks.
